Crab Hut owners open pho noodle soup pop-up in Mira Mesa

by Pam Kragen

Phở Gà Go, a new pre-order, takeout-only Vietnamese chicken noodle soup pop-up concept, has soft-opened inside the Crab Hut restaurant in Mira Mesa.

It’s the latest culinary project created by Vietnam native Kim Phan, who owns the Crab Hut and Kingfisher restaurants in San Diego.

Phan said she got the idea for the pop-up because pho soup is her family’s comfort food. As the mother of two young boys, she usually goes into the kitchen and starts cooking after her kids are in bed and the family can enjoy the soup the next day.

Phở Gà Go’s broth is simmered for more than 12 hours with chicken bones, and served with fresh, thick noodles, garlic from Christopher Ranch and organic ginger. The nước chấm and seasoning are made with Red Boat fish sauce, made with anchovies and sea salt barrel-aged for 12 months in Vietnam.

The Phở Gà Go  menu includes Phở gà đùi (Chicken Noodle Soup with Leg and Thigh), Phở gà ức và cánh (Chicken Noodle Soup with Breast and Wing),  Chả giò (order of 5 egg rolls with pork, shrimp, taro, wood ear mushroom, carrot and mung bean noodle), Gỏi Gà Xé Phai (Chicken Salad with breast meat and wing, banana blossom, pickled lotus stem, makrut lime leaves, rau răm and lemongrass) as well as Vietnamese iced coffee.

Because of the long cooking time needed, diners must pre-order their dishes at least one day in advance for pickup between noon and 3 p.m. Sundays or 4 to 7 p.m. Mondays and Tuesdays at 8280 Mira Mesa Blvd, Suite E, San Diego. Order online only at phogago.com.
